  1. 2 cups chickpeas (garbanzo beans) or black-eyed peas, cooked, drained

  2. 1/4 cup rice bran pulverized

  3. 2 cloves garlic cloves fresh, minced

  4. 1/2 teaspoon coriander ground

  5. 1 teaspoon cumin ground

  6. 1/4 teaspoon cayenne pepper

  7. 1 teaspoon cilantro dried or 2 tablespoons fresh, minced

  8. 1 x black pepper

  9. 1 x flour, all-purpose

  10. 1 x salad dressing, creamy creamy cucumber*

  1. In a food processor or blender combine all ingredients, except flour.

  2. The puree will not be entirely smooth, which is good.

  3. Preheat oven to 350 degrees.

  4. Dipping your hands lightly in flour, if you need to, shape the puree into balls, about 1 inch in diameter.

  5. Spray a large skillet with Pam and heat until very hot.

  6. Saute the balls on all sides, then transfer them to a baking pan and bake for 30 minutes.

  7. Serve with Creamy Cucmber Dressing.

  8. Makes 18 1 inch balls.

  9. Serving Size: 1 ball (without dressing)
