  2. 4 pork chops -- (3/4 inch thick)

  3. Salt and pepper

  4. 1 teaspoon vegetable oil

  5. 1 can whole tomatoes -- undrained (16 oz.)

  6. 1/2 cup uncooked quick cooking rice

  7. 4 green pepper rings

  1. Lightly sprinkle pork chops with salt and pepper. Heat oil in a skillet over medium high heat; brown pork chops on both sides. Reduce heat. Drain tomatoes, and add liquid to pork chops. Coarsely chop tomatoes, and add to pork chops; stir in rice. Place a green pepper ring on each chop. Cover and simmer 40 to 45 minutes or until chops are tender.
