  1. 1/2 Lb. Almond macaroons

  2. 1 Lb. fresh Ricotta Drained for 2 hours

  3. Pinch of ground cinnamon

  4. 2 large eggs

  5. Flour

  6. 1 egg beaten

  7. Fine dry breadcrumbs

  1. Crush the almond macaroons to a powder. Put them in a bowl and add the ricotta, cinnamon, a pinch of salt and 2 large eggs.

  2. Mix thoroughly, flour your hands, break off pieces and roll them into balls dip into egg and coat with breadcrumbs.

  3. Fry in butter, a few at a time, until golden brown. Remove with a perforated spoon and drain on paper towel. Sprinkle with confectioner's sugar and enjoy them hot or cold
