  1. Nonfat cooking spray - as needed

  2. 2 Boneless skinless chicken breasts - halved

  3. 1/2 cup 118ml 100%-fruit orange marmalade

  4. 1 teaspoon 5ml Rosemary

  5. 1/2 teaspoon 2 1/2ml Ground cloves

  6. 1/2 teaspoon 2 1/2ml Lemon pepper marinade

  7. 1 teaspoon 5ml Garlic powder

  8. 1 tablespoon 15ml Lemon juice

  9. 1 tablespoon 15ml Chopped fresh mint

  10. 1 tspn dried mint

  11. Salt - , to taste

  12. Freshly-ground black pepper - to taste

  1. Preheat oven to 350 degrees. Spray nonstick skillet. Cook chicken breasts over medium heat and brown on each side. Remove and place in sprayed shallow baking dish.

  2. Mix marmalade with rosemary, cloves, lemon pepper marinade, garlic powder, lemon juice, and mint. Heat, stirring, until marmalade melts.

  3. Season chicken breasts with salt and pepper. Brush with marmalade mixture. Bake 10 minutes. Turn breasts and brush with marmalade mixture. Bake another 8 to 10 minutes. Brush with marmalade glaze just before serving.

  4. This recipe yields 4 servings. Serving size: 1/4 recipe.
