  1. 2 T Fat

  2. 4 Diced onions

  3. 2 T Flour

  4. 1 qt Milk

  5. 1 c Grated cheese

  6. Salt

  7. Pepper

  8. Paprika

  1. Melt the fat in the kettle and add the diced onions.

  2. Cook until brown, then add flour, stirring constantly.

  3. Add milk (a little at a time), stirring constantly.

  4. When the soup is hot and thickened, add the cheese and stir until it's combined.

  5. Season with salt, pepper, paprika, and serve.

  6. This recipe dates from 1918.
