  1. 1 lb 454g / 16oz Butter

  2. 1/2 cup 118ml Lemon juice

  3. 2 teaspoons 10ml Fresh basil - chopped

  4. 2 teaspoons 10ml Cayenne pepper

  5. 2 teaspoons 10ml Fresh oregano - chopped

  6. 5 Garlic cloves - minced

  7. 1 Bay leaf - crumbled

  8. 1/2 cup 118ml Black pepper - finely ground

  9. Salt

  10. 4 lbs 1816g / 64oz Large raw shrimp in shells

  1. The shrimp should be of a size to number 30-35 per pound. Melt the butter in a large deep-sided frying pan or iron skillet over low heat. When melted, raise the heat, and add the remaining ingredients except the shrimp. Cook, stirring often, until browned to a rich mahogany color, about 10 minutes.

  2. Add the shrimp, stirring and turning to coat well with the seasoned butter. Cook until the shrimp have turned a rich deep pink, about 10 minutes. Serve the shrimp in their shells, peeling them at the table.
