  1. Ingredients (serves 4)

  2. 4 garlic cloves, thinly sliced

  3. 2cm knob of ginger, thinly sliced

  4. 1 lime, thinly sliced

  5. 4 x 500g (plate-sized) whole snapper

  6. 300g snow peas, trimmed, blanched

  7. 1/2 cup mint leaves

  8. 1/2 cup coriander leaves

  9. 3 spring onions, finely sliced

  10. Fried Asian shallots*, to garnish

  11. Steamed rice, to serve

  12. Lime dressing

  13. 1/2 small chilli, finely sliced

  14. 2 tbs lime juice

  15. 1 tbs fish sauce

  16. 1 tbs caster sugar

  1. Preheat the oven to 200°C. Line a large baking tray with baking paper.

  2. Divide garlic, ginger and lime among fish cavities and season. Place on tray and cook for 15-20 minutes or until flesh flakes away easily from bone.

  3. Combine dressing ingredients and stir to dissolve sugar. Slice snow peas finely and place in a bowl with herbs and spring onion.

  4. Pour dressing over salad and toss.

  5. Place whole fish on plates and top with salad. Garnish with fried shallots and serve with steamed rice.
