  1. 2 large eggs whole

  2. 2 1/2 teaspoons dijon mustard

  3. 1/4 teaspoon salt

  4. 2 tablespoons lemon juice

  5. 1 1/2 cups vegetable oil

  6. 1 1/2 cups olive oil

  7. 6 each garlic cloves peeled

  8. 1/2 teaspoon black pepper

  9. 1 x red hot pepper sauce (eg. Tabasco) dash

  10. 2 pounds salmon fillets skinless

  11. 1/4 cup white wine dry

  12. 1 each avocado large

  13. 2 each tomatoes cut into wedges

  1. Preheat oven to 375 F.

  2. In food processor combine egg, mustard, salt, and lemon juice.

  3. With the machine running, gradually add oils.

  4. Blend garlic, pepper, and tabasco.

  5. Check seasoning and add extra lemon juice if desired.

  6. Spread half of the sauce in a shallow baking dish (7 x 12 inches) and top with fish.

  7. Pour in wine and remaining aioli sauce.

  8. Top with alternating slices of avocado and tomato.

  9. Bake approximately 20 minutes.
