  1. 250g caster sugar

  2. 275g honey

  3. 2 tablespoons water

  4. 340g plain chocolate chips

  5. 120g chopped almonds

  6. 80g candied mixed fruit, chopped

  7. 2 eggs, beaten

  8. 60ml orange juice

  9. 350g plain flour

  10. 2 teaspoons ground cinnamon

  11. 1 teaspoon ground cloves

  12. 2 teaspoons ground cardamom

  13. 1 teaspoon bicarbonate of soda

  14. 1 teaspoon baking powder

  15. 180g icing sugar

  16. 2 1/2 tablespoons orange juice

  17. 4 tablespoons green decorating sugar

  18. 4 tablespoons red jelly beans or other red sweets

  1. Combine sugar, honey and water in a large saucepan. Bring to a rolling boil, then remove from the heat and set aside to cool. In a medium bowl, stir together the honey mixture with the chocolate chips, almonds, candied fruit, eggs and orange juice. Sift together the flour, cinnamon, cloves, cardamom, bicarbonate of soda and baking powder; stir into the fruit and nut mixture. Tightly cover the bowl, and refrigerate for 2 to 3 days to blend the flavours.

  2. Preheat oven to 170 C / Gas 3. Grease and flour a swissroll tin. Spread the dough evenly into the prepared tin.

  3. Bake for 35 to 40 minutes in the preheated oven. Cool and ice with the orange icing.

  4. To make the orange icing, put the icing sugar in a small bowl, and beat in the orange juice 1 tablespoon at a time until the desired consistency is reached. Spread over the cooled traybake. Cut bars into diamond shapes, and place sweets on top then sprinkle with the green sugar.
