  1. 1 Poached Egg

  2. 1 English Muffin , halved and toasted

  3. 1 slice Canadian Bacon

  4. Feta Cheese

  5. 2 Tbsp Chopped Red Onion

  6. 1-2 Kalamata Olives Sliced

  7. 1/2 Roma Tomato Chopped

  8. 1/2 cup Fresh Baby Spinach Leaves

  9. 1/4 cup Plain Low-fat Yogurt

  10. 1 tsp Basil

  11. 1 tsp Sugar

  12. 1 tsp Dijon Mustard

  13. Salt

  14. Pepper

Instructions Jump to Ingredients ↑

  1. Saute Canadian bacon until hot, then place on English muffin. Saute red onion until tender, add olives, tomato, and spinach leaves, then saute until spinach is wilted. Add Feta cheese just before removing from pan. Place ingredients on top of Canadian bacon and place egg on top of that. Stir together yogurt, basil, sugar, and mustard, then add salt and pepper to taste. Drizzle over egg.
