  1. 2 cups sugar

  2. 1 cup oil

  3. 3 eggs

  4. 3 cups flour

  5. 1 tsp baking soda

  6. 1 tsp baking powder

  7. 1/2 tsp salt

  8. 2 cups grated zucchini, well drained

  9. 1 cup crushed pineapple, well drained

  10. 1 cup chopped walnuts

  1. Mix sugar and oil. Add eggs and mix well.

  2. Sift flour with soda, baking powder, and salt into a large bowl.

  3. Add egg mixture to flour, then stir in zucchini and pineapple.

  4. Pour into a loaf pan and bake at 350° for 1 hour.

  5. For two smaller loaves, bake for 40 minutes.

  6. For 24 muffins, bake 25 minutes.
