  1. 200 g cubed beef

  2. 2 onions , finely chopped

  3. 2 cloves garlic , finely chopped

  4. 2 tomatoes , chopped

  5. 1 tsp ginger , chopped

  6. 1 tsp tomato puree

  7. 3 tbsp olive oil

  8. 1 small onion , finely chopped

  9. handful of coriander , finely chopped

  10. 1 tbsp kale , chopped

  11. 2 tbsp cooked kidney beans

  12. 2 tbsp sweetcorn

  13. 4 potatoes , cooked and mashed

  14. black pepper

  1. Heat the oil in a large saucepan over a medium heat and cook the beef until brown.

  2. Add the onion, garlic, tomatoes, ginger and tomato puree.

  3. Seal with a lid and cook over a very low heat for 1 hour, or until the meat is tender.

  4. Meanwhile, make bubble and squeak. Heat the oil in a frying pan over a medium heat and fry the onion until soft. Add the coriander, kale, beans and sweetcorn.

  5. Add the mashed potato, season with salt and freshly ground black pepper and work into the rest of the ingredients. Cook for 4-5 minutes, until heated through. Serve with the beef stew.
