  1. 1/2 cup Olive oil

  2. 2 eaches Onions, chopped

  3. 4 eaches Garlic cloves

  4. 2 pounds Runner beans, trimmed & sliced

  5. 1 pounds Tomatoes, chopped

  6. 1 tablespoon Sugar

  7. 1 teaspoon Salt teaspoon Black pepper

  8. 1 teaspoon Basil

  9. 2 cups Stock

  1. Heat oil in a pot & fry the onion for 2 minutes. add garlic & fry together. Add the rest of the ingredients & the seasonings. Mix together well. Fry for 5 minutes. Add stock. Simer till the beans are tender. Serve hot or cold. Jack Santa Maria, "Greek Vegetarian Cookery"
