  2. Sauce:

  3. 1 tbsp. vegetable oil

  4. 1/4 cup minced shallot

  5. 1 tsp. minced garlic

  6. 2 tsp. chili sauce

  7. 1/2 cup heavy or whipping cream

  8. 1/4 cup vodka

  9. 1/4 cup fresh lime juice

  10. Crab Cakes:

  11. 1 1/2 cups fresh breadcrumbs

  12. 8 ounces crabmeat, picked over

  13. 1/3 cup chopped green onion

  14. 1/4 cup chopped fresh cilantro

  15. 1 large egg

  16. 2 tbsp. water

  17. 2 tbsp. vegetable oil for frying

  1. For Sauce:

  2. Cook onion and garlic with oil until tender, about 5 minutes. Add chili sauce and stir 1 minute. Add cream, vodka and lime juice. Simmer until thickened to sauce consistency, about 7 to 10 minutes.

  3. For Crab Cakes:

  4. Stir together breadcrumbs, crab, green onion and cilantro in a bowl. Whisk together egg and water and stir into crab mixture. Form into 4 patties, using about a 1/2 cupful of crab mixture for each. Heat 2 tbsp. oil in a skillet. Add crab cakes and cook until golden brown, about 4 minutes per side. Drizzle with sauce at service.
