  1. Basmati Rice 4 cups

  2. Yogurt 1/2 cup

  3. Chicken 1 kg.

  4. Green chilies 4

  5. (Large) Onion 1

  6. Sliced

  7. Cloves 6

  8. (Large) Tomato 1

  9. Chopped

  10. Cinnamon 3 sticks

  11. Ginger garlic paste 4 tsp.

  12. Cardamon 3

  13. Coriander Powder 1 tsp

  14. Mint leaves 1 cup

  15. Red Chilli Powder 1 tsp.

  16. Coconut milk 1 cup

  17. Garam masala 1 tsp.

  18. Ghee 2 tbsp.

  19. oil 2 tbsp

  20. Bay leaves 2

  21. Salt to taste.

  1. Marinate the chicken pieces in yoghurt, 2tsp of ginger garlic paste, chilli powder and coriander powder for 1 hour.

  2. Wash and soak the rice for 30 minutes.

  3. Heat 2 tbsp oil in a heavy bottom pan and fry the marinated chicken, till it is soft and all the liquid dries up. Drain and keep side.

  4. In the same pan add the ghee and add cinnamon, cardamom, cloves and bay leaves.

  5. Stir fry for 2 minutes and add the sliced onions, ginger garlic paste and green chillies.

  6. Sauté until the onions are brown. Add tomatoes, stir fry till the oil floats on the top.

  7. Add mint leaves and stir fry for 1 minute.

  8. Add 5 cups of water and 1 cup of coconut milk and bring it to a boil.

  9. Add the well drained rice and fried chicken, garam masala powder and salt.

  10. Cover and cook over low heat until the rice is cooked.
