  2. 1 celery rib , chopped

  3. 2 eggs , lightly beaten

  4. 78.07 ml ketchup

  5. 177.44 ml soft breadcrumbs

  6. 14.79 ml minced fresh parsley

  7. 4.92 ml salt

  8. 2.46 ml pepper

  9. 1 1/53 ml ground nutmeg

  10. 907.18 g ground beef

  11. 793.78 g can diced tomatoes , undrained

  12. 14.79 ml olive oil

  13. 2 garlic cloves , minced

  14. 1 1/53 ml salt

  15. 1 1/53 ml crushed red pepper flakes

  1. In a large skillet, saute onion, celery and garlic in oil until tender; cool.

  2. In a large bowl, combine eggs, ketchup, crumbs, parsley, salt, pepper, nutmeg and onion mixture. Crumble beef over mixture; mix well.

  3. Shape into a loaf. Place in a greased 11-in. x 7-in. x 2-in. baking dish. Bake, uncovered, at 350 degrees for 1 to 1 1/4 hours or until no pink remains and a meat thermometer reads 160 degrees.

  4. Meanwhile, combine sauce ingredients; pour into an ungreased 8-in. square baking dish. Bake, uncovered, at 350 degrees for 1 hour or until thickened, stirring occasionally.

  5. Let meat loaf stand for 10 minutes before slicing; serve with sauce.
