  1. 2 ripe bananas , mashed

  2. 2/3 cup brown sugar

  3. 1/2 cup whole egg mayonnaise (NO LOWFAT PLEEEEEASE)

  4. 1 3/4 cup self rising flour

  5. 2 tbs custard powder (I like Bird's)

  6. 3 egg yolks

  7. 1/2 tsp vanilla extract

  8. coffee Ganache(the frosting )

  9. 1/3 up cream

  10. 8 oz dark chocolate , chopped

  11. 1 shot of espresso

  1. Preheat oven to 350 Line a 12 capacity muffin tray with cupcake liners.

  2. Beat the mayonnaise, sugar, egg yolks and brown sugar until combined.

  3. Add the mashed banana, flour and custard powder and beat for 2 minutes on low speed.

  4. Divide evenly into cupcake liners and bake for 20-25 minutes or until toothpick comes out clean.

  5. Allow cupcakes to cook completely before frosting.

  6. For the frosting:

  7. Heat cream and coffee and bring to boil.

  8. Pour over chopped chocolate.

  9. Stir until chocolate has melted and combined with the cream and coffee.

  10. Allow ganache to cool a little before covering the tops of cupcake.
