  1. 1 tablespoon olive oil

  2. 1 1/2 cups milk

  3. 1 1/2 tablespoons vinegar

  4. 2 tablespoons melted butter

  5. 1/2 cup sugar

  6. 1 tablespoon vanilla extract

  7. 3 cups flour

  8. 1/4 teaspoon baking soda

  9. 1 tablespoon baking powder

  10. 3/4 teaspoon salt

  11. 2 1/4 teaspoons cardamom

  1. Preheat oven to 375 degrees.

  2. Spread olive oil in 12-inch cast iron skillet, bottom and sides. Warm skillet in preheating oven while preparing batter. Pour milk into a large bowl and stir in vinegar.

  3. In a small bowl, whip the melted butter and sugar together. Add sugar/butter to milk/vinegar, then add vanilla extract.

  4. In a large bowl combine all the dry ingredients, including the cardamom. Fold blended dry ingredients into the combined liquid ingredients. Mix until just moist and spread into skillet.

  5. Bake for 25 to 30 minutes, or until top is golden brown.

  6. Serve warm with butter.
