  1. 1 (6 oz) lean boneless pork loin chop, cut 3/4" thick

  2. 1/4 tsp Italian herb seasoning without pepper

  3. Pinch of salt

  4. Nonstick vegetable cooking spray

  5. 1/2 tsp vegetable oil

  6. 2 tbsp sliced onion

  7. 1/4 tsp olive oil

  8. 1/4 cup sliced mushrooms

  9. 1/2 cup broccoli florets

  10. 1/4 cup sliced carrots

  11. 1/2 cup sliced zucchini

  12. 1/2 tbsp water

  13. 1/4 cup long-grain brown rice, cooked according to directions without salt or fat

  1. Trim all visible fat from pork loin chop. Rub Italian herb seasoning and salt on both sides of chop. In a skillet sprayed with nonstick vegetable cooking spray over medium-low heat, add vegetable oil. Add pork and sliced onions (optional) to skillet. Cover and cook for 20 minutes. Turn pork chop and cook, covered, for 5 to 10 more minutes or until meat is tender and no pink remains. Meanwhile in another skillet over medium-high heat and sprayed with nonstick vegetable cooking spray, add olive oil and mushrooms. Cook 2 to 3 minutes and add broccoli, carrots, zucchini, and water. Cover and cook vegetables 4 to 6 minutes or until tender. Serve pork loin chop with onions on top next to vegetables and hot cooked brown rice.
