  1. 1/2 cup veal stock (125 ml)

  2. 1/4 cup smooth peanut butter (60 ml)

  3. 1 tablespoon soy sauce (15 ml)

  4. 1 tablespoon rice wine vinegar (15 ml)

  5. 1/2 teaspoon toasted sesame oil (2 ml)

  6. Salt and pepper

  7. 1/4 cup Mirin (60 ml)

  8. 2 tablespoons rice vinegar (30 ml)

  9. 1 teaspoon fish sauce (5 ml)

  10. 1/2 teaspoon chili flakes (2 ml)

  11. 1/2 teaspoon Sriracha (2 ml)

  12. Zest of 1 orange

  13. Juice of 2 oranges

  14. 1 tablespoon grated ginger (15 ml)

  15. 1 tablespoon honey (15 ml)

  16. 1 small garlic clove, minced

  17. 1 teaspoon corn starch diluted in a little water (5 ml)

  1. In a small saucepan on medium heat, mix all the ingredients. Stir and cook for about 5 minutes until reduced to a creamy sauce. Set aside.

  2. In a small saucepan, whisk all the ingredients and bring to a boil. Let simmer for about 1 minute until it thickens. Set aside.
