  3. 32 oz ricotta cheese

  4. 2 large egg s, lightly beaten

  5. 1/2 C shredded mozzarella

  6. 3 Tb Parmesan

  7. 3 Tb pine nut s

  8. 20 basil leaves, chiffonaded

  9. 1 box of lasagna noodles, cooked

  1. Boil lasagna noodles as per package instructions.

  2. Mix the first seven ingredients together gently in a large bowl. Do not overmix because it starts developing a strange texture.

  3. Lie out each cooked noodle flat. Put a generous spoonful of filling at one end of the noodle and then roll up. Please into light greased 9x11" baking dish. Continue with rest of noodles.

  4. Pour tomato sauce over rollatini. Sprinkle with eztra Parmesan cheese and bake for 15 minutes at 375*F.
