  1. 500g chicken mince

  2. 4 spring onions , finely chopped

  3. 1 lemongrass stalk, woody leaves removed and very finely chopped

  4. ginger , grated to make 1 tbsp

  5. 1 egg white

  6. 2 tbsp tamarind paste

  7. 2 Little Gem lettuces , leaves pulled apart, to serve

  8. rice noodles , cooked to serve

  9. 1 papaya , seeded, peeled and diced

  10. 1/2 red onion , finely diced

  11. 1 green chilli , finely diced

  12. 1/2 tsp ground cumin

  13. 1 lime , juiced

  14. olive oil

  1. Put the chicken mince, spring onions, lemon grass, ginger, egg white and tamarind in a bowl. Season really well and form into small patties (about 20). Heat a little oil in a pan and cook until golden on both sides and cooked through (about 4 minutes each side).

  2. Toss all the salsa ingredients with 1 tbsp olive oil and season. Serve the patties with crisp lettuce leaves and noodles.
