  1. 6 bone-in chicken thighs , skin removed, trimmed of fat

  2. 4 piece(s) potatoes , peeled and cut into spears

  3. 6 large shallots , peeled and halved

  4. 4 clove(s) garlic , peeled

  5. 2 teaspoon(s) chopped fresh rosemary , or 1/2 teaspoon dried rosemary, crushed

  6. 1 teaspoon(s) salt

  7. 1/2 teaspoon(s) freshly ground pepper

  8. 1 1/2 tablespoon(s) lemon juice

  9. 2 cup(s) vegetable stock

  10. 2 sprig(s) rosemary

  11. 4 piece(s) carrots,peeled and cut

  1. Place chicken, potatoes, shallots, garlic, vegetable stock, rosemary, salt and pepper in a 6-quart slow cooker; stir to combine. Put the lid on and cook on low until the potatoes are tender, about 5 hours. Before serving, remove bones from the chicken, if desired, and stir in lemon.

  2. optional: first brown the chicken in a pan with a bit of olive oil, before starting the whole process in the slow cooker.
