  1. Vegetables of your choice:

  2. Oil for frying

  3. 2 large onions

  4. 1 green chili

  5. 1 tbsp of ginger

  6. 1 tsp garlic paste

  7. 2 tomatoes

  8. Cilantro leaf

  9. Spices:

  10. 1 tsp cumin seeds

  11. 2 tbsp of salt

  12. 1 tsp of red chili powder

  13. 1 tsp of turmeric powder

  14. 2-3 cloves

  15. 2 green cardamoms

  16. 1 small piece of cinnamon

  17. 1bay leaf

  18. 1 tsp of coriander powder

  19. 1/2 tsp of dried fenugreek leaves (kasoori methi)

  20. 1/2 tsp garam masala

  1. Cut the vegetables like beans, cauliflower, mushrooms, green peppers, carrots, potatoes etc.

  2. Stir fry vegetables to make them tender.

  3. Cover the vegetables and give them 5-6 minutes.

  4. Making a paste out of onions, ginger, garlic, and green chilies.

  5. Put 1 tsp of oil in frying pan.

  6. Add spices like cloves, cinnamon stick, and bay leaf, and green cardamom (optional), cumin seeds.

  7. Mix all.

  8. Put the paste in pan.

  9. Add salt, red chili powder and turmeric powder.

  10. Mix all well around 3-4 minutes.

  11. Add tomato paste, coriander powder and mango powder if you wish.

  12. After 5-6 minutes add the vegetables.

  13. Pinch of fenugreek leaves, garam masala.

  14. Right before serve put chopped cilantro leaf.

  15. Serve the curry with rice, naan, and chapatti.
