  1. 3 slices bacon

  2. 2 lb. boneless beef chuck roast

  3. 1-2 Tbsp. Cajun or Creole seasoning blend

  4. 1 onion, chopped

  5. 1 green bell pepper, finely chopped

  6. 2 stalks celery, chopped

  7. 4 cloves garlic, sliced

  8. 2 cups frozen corn

  9. 14 oz. can diced tomatoes with roasted garlic

  10. 2 plum tomatoes, chopped

  11. 1 jalapeno pepper, sliced

  12. 1/8 tsp. white pepper

  1. In heavy skillet cook bacon until crisp. Remove from skillet, drain on paper towels, and let cool. Rub seasoning blend on roast and brown in bacon fat, turning once, for 4-5 minutes until browned. Place in 4 quart crockpot. Add onions, bell pepper, celery, and garlic to skillet and cook for 2-3 minutes. Spoon into crockpot along with remaining ingredients.

  2. Cover and cook on low for 8-10 hours or until roast is tender.
