  1. 3 lb Lean Beef

  2. 1/8lb Rendered Beef Suet, Optional

  3. 12 Chili Peppers

  4. 1 tb Mexican Oregano

  5. 1 tb Cumin

  6. 1 tb Cayenne

  7. 1 tb Tabasco Sauce

  8. 1 tb Salt

  9. 2 Cloves Garlic, Minimum

  10. 3 tb Masa Harina

  11. 3 Whole Chili Pods

  1. + Parboiled, skinned and pulped.

  2. ~-- Cut the meat into 1/2" to 1" chunks.

  3. In a heavy pot or Dutch oven sear the meat until lightly browned.

  4. Add the suet, peppers and pepper water to barely cover.

  5. Bring to a boil then simmer 30 minutes.

  6. Add the rest of the ingredients except the masa harina and whole peppers.

  7. Bring to a boil and simmer for 45 minutes adding pepper water only to keep from burning.

  8. Skim off excess grease and add masa harina and chili pods.

  9. Simmer 30 minutes.

  10. NOTE: This claims to be basic Texas chili.

  11. It certainly has no frills but don't let that put you off.

  12. It is very good.

  13. You can skip the suet if desired.

  14. The cayenne and Tabasco can also be left out and more chiles added instead.

  15. Don't use the chili powder found in the grocery store as it is a blend of chiles and spices.

  16. Use ground New Mexice chili instead and it can be found in the Mexican section in supermarkets.
