  1. 1 3/4 cup all purpose flour

  2. 2 tsp. baking powder

  3. 1/4 tsp. baking soda

  4. 1/2 tsp. salt

  5. 1/3 cup solid vegetable shortening

  6. 2/3 cup sugar

  7. 2 large eggs, beaten to blend

  8. 1 1/2 cup mashed ripe banana

  9. 1/2 cup chopped walnuts

  1. Sift together flour, baking powder and baking soda. Stir in salt. Cream the shortening in a medium bowl. Gradually add sugar and egg. Add flour mixture and mashed banana alternately in 3 additions, beginning and ending with flour. Fold in walnuts. Place batter in a 2 1/2 quart mold and cover with foil. Place on a rack in the crockpot. Cover crockpot, propping lid slightly open with a toothpick to let steam escape. Cook on high 4 to 6 hours. Cool in pan 10 minutes. Turn out onto a rack. Cool slightly. Serve warm.
