  2. 8 eggs

  3. 1 cup milk

  4. 1 tablespoon instant minced onion

  5. 1/2 teaspoon salt, optional

  6. 1 quart cubed day old or older bread, about 6 slices

  7. 1 cup shredded carrots

  8. 1 cup,

  9. 4 ounces, shredded Cheddar cheese

  1. In large bowl, beat together eggs, milk, onion and salt until blended.

  2. Stir in remaining ingredients.

  3. Pour into greased 1 1/2 quart casserole.

  4. Cover. Refrigerate several hours or overnight. Uncover.

  5. Bake in preheated 350 degrees F oven until knife inserted near center comes out clean, about 55 to 60 minutes.
