  1. for Mock Veal Roast Recipe

  2. 1/2 pint shelled roasted peanuts

  3. 1/2 pint lentils

  4. 2 tablespoons melted vegetable shortening

  5. 1/2 pint toasted breadcrumbs

  6. Milk, pepper and salt to taste

  1. Soak the lentils over night.

  2. Drain, bring them to a boil, drain, and cover with fresh water. Boil until tender and drain again; press them through a colander.

  3. Add nuts, chopped or ground, melted vegetable shortening, breadcrumbs and seasoning, with sufficient milk to make it the consistency of mush.

  4. Pour into baking dish and bake in a moderate oven 1 hour.

  5. Beans or peas may be substituted for lentils. .
