  1. 2 teaspoons 10ml Potatoes - peeled, and (medium)

  2. Cut into 1/2" cubes

  3. 1 Hard-cooked egg - sliced

  4. 1/4 cup 27g / 1oz Chopped celery

  5. 1/4 cup 36g / 1 1/3oz Chopped bell pepper

  6. 1/4 cup 15g / 1/2oz Chopped onion

  7. 2 tablespoons 30ml Chopped pimento

  8. 1 tablespoon 15ml Mustard

  9. 4 tablespoons 60ml Lite mayonnaise

  1. Cook the potatoes in boiling water for 8 to 10 minutes until tender but still firm (be careful not to overcook!).

  2. Drain and cool. Mix all ingredients together and chill before serving.

  3. This recipe yields 4 servings. Serving size: 1/2 cup.
