  1. 1 tablespoon olive oil

  2. 2 chorizos, sliced diagonally

  3. 1 onion, finely sliced

  4. 1 teaspoon smoked paprika

  5. 420g can baked beans in tomato sauce

  6. 400g can cherry tomatoes

  7. 250g button mushrooms, halved

  8. cup water

  9. chopped parsley, toasted bread stick,

  10. to serve

  1. Heat oil in a large saucepan on medium. Cook chorizo for 3-4 minutes, stirring, until browned. Remove from pan with a slotted spoon. Drain on paper towel.

  2. Saute onion in same pan for 3-4 minutes, until tender. Mix in paprika, and cook, stirring, for 1 minute, until fragrant.

  3. Return chorizo to pan with baked beans, tomatoes, mushrooms and water. Simmer, uncovered, for 4-5 minutes, until mushrooms are tender. Sprinkle with parsley and serve with breadstick.

  4. TOP TIP Replace chorizos with beef sausages or frankfurts, if preferred.
