  1. 1 1/2 lbs 681g / 24oz Sweet/hot Italian link sausage

  2. ml Green bell pepper - 1

  3. 2 tablespoons 30ml Olive oil

  4. 3/4 lb 340g / 11oz Ziti pasta - cooked

  5. Parmesan cheese - grated

  6. Parsley bouquets

  7. 5 cups 1185ml Marinara sauce

  8. 28 oz 795g Canned tomatoes-Italian style or plum

  9. 10 3/4 oz 305g Tomato puree

  10. 1 teaspoon 5ml Garlic - minced

  11. 4 tablespoons 60ml Olive oil

  12. 1/2 cup 73g / 2.6oz Fresh basil - packed, chopped

  13. Salt and pepper

  1. Bake or pan-fry the sausages until fully cooked, drain, cool. Halve the sausages and cut the split sausages into 1/2" slices.

  2. Sauteethe bell peppers in olive oil over moderate heat only until their crispness is loss, but peppers are not soft. In a heavy sauce pan add the tomatoes, tomato puree, garlic, olive oil and fresh basil and bring to a light simmer on moderate heat.

  3. Add the sauteed pepper strips and cooked sausage and heat for 3 to 5 minutes.

  4. Serve the pasta, topped with the sausage, peppers and salsa Marinara and garnish each plate with a parsley bouquet. Pass the Parmesan.
