  1. 12 ounces pitted prunes

  2. 2 cups Sauterne or other sweet white wine

  3. 1/2 vanilla bean, split lengthwise

  4. 2 tablespoons sugar

  5. 2-inch piece of lemon zest, organic if available

  6. 1 cinnamon stick

  1. Soak the prunes in the wine for 4 to 6 hours.

  2. Scrape the seeds from the vanilla bean into a small bowl; reserve the pod. Add the sugar and rub the seeds with the sugar to blend well.

  3. In an enameled or stainless steel saucepan, simmer the prunes in the wine with the vanilla sugar, vanilla bean pod, lemon zest, and cinnamon stick for 10 minutes. Let cool completely, then cover and refrigerate until well chilled, at least 6 hours and up to 3 days. Serve cool.
