  1. 750g new potatoes , cut into 1cm cubes

  2. a handful flat-leaf parsley , finely chopped

  3. 1 lemon , zested

  4. 2 garlic cloves , finely chopped

  5. olive oil

  1. Drop the potatoes in a large pan of boiling salted water and simmer until they are cooked but not falling apart (about 10 minutes).

  2. Drain and return the potatoes to the pan then add all the other ingredients and toss together with some seasoning.
