  1. INGREDIENTS:

  2. 1 can red kidney beans, drained (yields about 1 tightly packed rounded cup of beans)

  3. 2 large onions

  4. 6 garlic clovettes

  5. A small piece ginger

  6. 1/2 tsp black peppercorns

  7. 1 stick cinnamon

  8. 4 cloves

  9. 4 dried red chillies

  10. 8-10 green chillies (the small green variety)

  11. 1 tsp cumin seeds

  12. 2 tomatoes, chopped

  13. 1 tsp lime juice, freshly squeezed

  14. 2 tbsp coriander leaves, chopped

  15. 1 bay leaf, cut into 2-3 large pieces

  16. 2 tbsp ghee or cooking oil

  17. DIRECTIONS:

  18. Blend together 1 onion, garlic, ginger, peppercorns, chillies, cloves, cumin and cinammon. Set aside.

  19. Mince the remaining onion.

  20. Heat the oil and add the bay leaf and minced onion and fry on high heat.

  21. When the onion turns light brown, add the blended masala and continue to fry on high heat till oil starts leaving the side of the masala. This will take in the vicinity of 12-16 mins.

  22. Now remove from heat, add the tomatoes, drained beans and salt to taste.

  23. Add water as needed. Usually about 1 cup of water is enough for a good gravy.

  24. Bring it to a boil.

  25. Add the coriander leaves and lime juice.

  26. Mix well and heat for about 3-4 minutes
