  1. 1 cup(s) flour

  2. 2 teaspoon(s) baking powder

  3. 1/2 teaspoon(s) baking soda

  4. 1/2 teaspoon(s) salt

  5. 1/2 teaspoon(s) (ground) cinnamon

  6. 1 1/2 teaspoon(s) (ground) ginger

  7. 1/8 teaspoon(s) (ground) cloves

  8. 1 1/4 cup(s) buttermilk

  9. 2 tablespoon(s) molasses

  10. 3 tablespoon(s) (unsalted) butter , melted

  11. 1 large egg

  12. Vegetable oil , for brushing pan

  13. Maple syrup , and/or fresh fruit, for garnish, optional

  1. In a large bowl, combine flour, baking powder, baking soda, salt, cinnamon, ginger, and cloves. In a separate bowl, whisk buttermilk, molasses, butter, and egg to blend; add to dry ingredients and stir just until moistened.

  2. Heat a griddle or 12-inch skillet over medium heat until a drop of water sizzles; brush with vegetable oil. Spoon batter onto hot griddle in 2- to 3-inch rounds. Cook until tops are bubbly and edges look dry; flip and cook until underside is golden. Transfer to platter and keep warm.

  3. Repeat with remaining batter, brushing with more oil as necessary. Serve each person a stack of silver dollar pancakes, and top with maple syrup and/or fresh fruit, if you like.
