  1. 1/2 lb 227g / 8oz Bacon

  2. 3 cups 187g / 6.6oz Julienned onions

  3. Salt - to taste

  4. 1 Cayenne pepper - or to taste

  5. Freshly-ground black pepper - to taste

  6. 2 tablespoons 30ml Minced shallots

  7. 1 tablespoon 15ml Minced garlic

  8. 1 Dixie Beer - (12 oz)

  9. 1/4 cup 59ml Rice wine vinegar

  10. 1 tablespoon 15ml Molasses

  11. 6 lbs 2724g / 96oz Greens - cleaned, stemmed

  12. (such as mustard greens, collard greens,

  13. Turnip greens, kale, and/or spinach)

  1. In a large pot, render the bacon until crispy, about 5 minutes. Add the onions and cook for about 6 to 7 minutes or until the onions are wilted. Season the mixture with salt, pepper and a pinch of cayenne. Add the shallots and garlic and cook for 2 minutes.

  2. Stir in the beer, vinegar, and molasses. Stir in the greens, a third at a time, pressing the greens down as they start to wilt. Cook the greens, uncovered for about 1 hour and 15 minutes. Mound the greens in the center of the platter. Spoon the sauce over the top.

  3. This recipe yields 8 servings.
