  1. 2 cups rice

  2. 2 cups water

  3. 1 cup coconut milk

  4. 1/2 cup desiccated coconut

  5. 1/2 tsp salt

  6. 1 onion, minced

  7. 1 clove garlic, minced

  1. Wash rice and place in a heavy saucepan. Pour in water, coconut milk, desiccated coconut, salt, onion and garlic. Stir to mix thoroughly and bring to the boil.

  2. Stir once more, then cover with a lid, reduce the heat and simmer for twenty minutes.
