  1. 1 lb pancetta , cut into 1/2" cubes

  2. 1 T olive oil

  3. 1 T minced garlic

  4. 1 C chopped celery

  5. 1 1/2 C chopped onion

  6. 2 Golden Delicious apple s, peeled, thinly sliced

  7. 2 C reduced sodium chicken broth

  8. 5 qts cubed (1") sourdough bread

  9. 1/3 C chopped flat leaf parsley

  10. 1 T chopped fresh thyme leaves

  1. Preheat oven to 350°. Brown pancetta in oil in a frying pan over medium heat, stirring often about 10 minutes. Add garlic, celery and onion; saute about 4 minutes. Add apples, stir to coat. Transfer to a large bowl. Add broth to pan; stir to scrape up browned bits. Pour into bowl.

  2. Stir in bread, parsley and thyme. Spoon into a greased 9x13" dish. Bake until browned and crusty about 45 minutes.
