  2. 1/2 lb. Italian sausage , bulk

  3. 1 small onion , diced

  4. 1 large carrot , finely diced

  5. 3 stalks celery , diced

  6. 2 cloves garlic , minced

  7. 2 14 1/2-oz. cans diced tomatoes

  8. 1 15-oz. can cannelloni beans , with liquid

  9. 1 15-oz. can great northern beans , with liquid

  10. 1 15-oz. can tomato sauce

  11. 1 12-oz. can V-

  12. 8 juice

  13. 1 tbls. white vinegar

  14. 1 tsp. salt

  15. 1 tsp. oregano

  16. 1 tsp. basil

  17. 1/2 tsp. pepper

  18. 1/2 tsp. thyme

  19. 1/2 lb. elbow pasta

  20. Handful of spinach

  21. Grated Parmesan to Garnish

  1. Brown ground beef and sausage in large saucepan over medium heat Drain fat Add onion, carrot, celery and garlic; cook for 10 minutes or until veggies are crisp tender.

  2. Add remaining ingredients, except pasta and spinach; simmer for 1 hour In another saucepan, cook pasta according to package directions until al dente Drain pasta After soup has simmered an hour, add cooked pasta and spinach then simmer 5-10 minutes After placing in bowls, sprinkle with Parmesan cheese
