  1. pork 750gm

  2. Black pepper corns 1tsp

  3. Cardamoms. green 10

  4. Cinnamon 3 x 8 cm sticks

  5. Cloves 8

  6. Coriander leaves chopped 1tbsp

  7. Cumin (jeera) seeds 1 tsp

  8. garlic paste 2 tbsp

  9. ginger paste 3 tbsp

  10. Green chillies chopped fine 4

  11. oil 1/3 cup

  12. Malt vinegar 1 cup

  13. Chopped onion 1 large

  14. Pickled onions 1/3 cup

  15. Diced potatoes 2 cups

  16. Red chillies , whole 10

  17. sugar 1tsp

  18. Turmeric 1tsp

  1. Method Cut the pork into 1” cubes. Pound the peppercorns. Mix with 0.5 cup of vinegar, sugar, bruised cardamom, green chillies, and crushed cloves. Layer with the pork and leave to marinate for at least 2 hours, preferably overnight.

  2. In a blender make a paste of the: red chillies, turmeric, cinnamon, cumin, ginger and garlic pastes 0.5 cup vinegar and 0.25 cup water.

  3. Heat the oil and fry the potatoes until brown. remove.

  4. In the same oil sauté the onion until golden brown Add the paste and stir fry until the oil surfaces Add the pork and the marinade and sauté for 4 mins, add 4 cups water, bring to boil and then simmer on a low heat until pork is tender.

  5. Add the fried potatoes and the pickled onions and cook until potatoes soften and gravey thickens.

  6. Garnish with coriander leaves and serve with boiled rice. This is hot!
