  4. ground cumin

  5. paprika

  6. chili powder

  7. fresh basil -- chopped

  8. white vinegar

  1. Layer fresh rosemary sprigs on top of skinned chicken and leave on during smoking; lay chicken or chicken breasts on a bed of fresh rosemary sprigs during smoking.

  2. Use white vinegar with some of the rub as a mop about 2 or 3 times during smoking. Dab on gently so as not to disturb the rosemary.
