  1. 1/4 cup 59ml White wine vinegar

  2. 1/2 cup 118ml Olive oil

  3. 1 teaspoon 5ml Dijon mustard

  4. 1 teaspoon 5ml Sugar

  5. Kosher salt - to taste

  6. Freshly-ground black pepper - to taste

  7. 1 cup 237ml Finely-shredded green cabbage

  8. 1 cup 237ml Finely-shredded red cabbage

  9. 1/2 cup 55g / 1.9oz Julienned carrot

  10. 1/2 cup 118ml Julienned red pepper

  11. 1/4 cup 15g / 1/2oz Finely-slivered red onion

  12. 1 cup 237ml Chives bunch - cut 2" lengths (small)

  1. In a bowl whisk together the vinegar, oil, Dijon, sugar, and season with salt and pepper. Set aside.

  2. In another bowl, toss the cabbage, carrot, red pepper, red onion, and chives together lightly.

  3. Drizzle the salad with the vinaigrette, and toss to coat.

  4. This recipe yields 4 to 6 servings.
