  1. 1 tablespoon 15ml Paprika

  2. 2 1/2 teaspoons 12ml Salt

  3. 1 teaspoon 5ml Onion powder

  4. 1 teaspoon 5ml Garlic powder

  5. 1 teaspoon 5ml Cayenne pepper

  6. 3/4 teaspoon 3.8ml White pepper

  7. 3/4 teaspoon 3.8ml Black pepper

  8. 1/2 teaspoon 2 1/2ml Thyme

  9. 1/2 teaspoon 2 1/2ml Oregano

  10. 1/4 teaspoon 1 1/3ml Sage

  11. - white fish fillets

  12. - vegetable oil

  1. Mix all spices together and store in a tight jar. Heat 1 tablespoon vegetable oil in cast iron skillet on medium high heat until very hot, but not quite smoking. Rinse fish fillets and pat dry with paper towel.

  2. Rub a little oil on both sides of the fish and sprinkle spice mix on both sides (generously, if you like it hot).

  3. Sear the fish in the hot oil for about 1 minute. Flip it and cook the other side. If the fillets are thick, you may need to lower the heat and cover to fully cook the fish.

  4. Serve with lemon wedges.
