  1. 2 teaspoon each ground cumin, ground pepper, ground cardamom, turmeric

  2. 1 teaspoon salt

  3. 2 whole black limes

  4. 3 tablespoons vegetable oil

  5. 2 onions, chopped

  6. 3 teaspoons crushed garlic

  7. 1 large green chilli, chopped

  8. 1 bunch each dill and coriander, chopped

  9. 3 tomatoes, chopped

  10. 2-3 tablespoons tomato paste

  11. 2-3 cups water

  12. 4 fish fillets

  13. 2 tablespoons plain flour

  14. steamed rice, to serve

  1. Mix ground spices and salt. Pierce limes (4-5 times) with a skewer. In a large pot; saut the onions in 2 tablespoons of the oil. Add garlic, chilli, dill, coriander, tomatoes, tomato paste, black limes and 2 teaspoons of spice mix. Add 2 cups of water; bring to a simmer cover and keep warm while preparing fish.

  2. Sprinkle remaining spice mixture on both sides of fish and dust with flour. Fry lightly in a large frypan with remaining vegetable oil on both sides.

  3. Transfer fish from pan to stewing pot. Add more water if needed to cover fish. Simmer gently for 15-20 minutes until fish is done. Serve with rice.
