  1. 800gr piece pork belly

  2. 1 lt master stock

  3. 200ml chilli caramel

  6. 2 cups tapioca starch

  8. 2 table spoons five spice powder

  9. 1 lt vegetable oil

  10. Black vinegar

  11. 6 mint leaves, torn

  12. 1 pinch coriander leaves

  13. 6 vietnamese mint leaves

  14. 6 shiso leaves, torn

  15. 50 gr cabbage , shredded finely

  16. 20 gr red cabbage , shredded finely

  17. green apple , sliced finely

  18. Nuoc c ham , enough to dress the slaw

  19. 2 garlic cloves

  20. 50ml fish sauce

  21. 50ml lime juice

  22. 50ml rice vinegar

  23. 2 red bullet chillies , sliced

  24. 70gr caster sugar

  25. 500gr caster sugar

  26. 500ml water

  27. 3 small red chillies , chopped

  28. 12 star anise

  29. 100ml fish sauce

  30. 100 ml light soy sauce

  1. To make the nuoc cham Mix all the ingredients in a bowl stir until the sugar dissolves. Leave to stand for at least 30mins before using.
