  1. 3-4 large potatoes, peeled and thinly sliced

  2. plain flour, for sprinkling

  3. 2 small shallots, sliced

  4. 3 rashers bacon or sliced ham, chopped

  5. pepper to taste

  6. 125g mature Cheddar cheese, grated

  7. 125ml milk

  1. Preheat oven to 180 C / Gas 4. Grease a baking dish.

  2. Arrange a layer of potato in the baking dish. Sprinkle with flour, pepper, bacon, shallots and cheese. Repeat until all ingredients are used up, finishing on potatoes, cheese and pepper.

  3. Pour milk over the potatoes and bake in preheated oven for 1 1/2 hours.
