  21. 1 (3-inch) cinnamon sticks , broken up

  26. 1 tablespoon black peppercorns

  1. • Preparation FOR GOAT Mixing the Marinade;

  2. Combine the curry powder, onions, scallion, salt, pepper, chilies, ginger, thyme and half a cup of water in a blender. Add more water if the ingredients do not mix well.

  3. Marinating the Meat;

  4. Rub the mixture in to the cubes of meat, let marinade in the fridge overnight.

  5. Separating the Meat and the Marinade;

  6. Scrape the marinade off the meat and save for later.

  7. Sealing the Meat;

  8. Add the meat and butter to a frying pan and brown gently. Adding the Remaining Ingredients. Place the meat in a saucepan and add the potatoes, carrots and marinade then add enough water to cover the meat.

  9. Bring to the boil then let simmer until the meat is fork tender (this should take 1hr - 1.

  10. Directions for curry powder Place all ingredients in a container with an airtight lid except ginger and turmeric. Shake to combine and, Store in a cool dry place for up to 6 months. When ready to use, Grind whole spices to a powder in grinder. Add ginger and turmeric and pulse to combine well.
