  1. 1 cup quick cooking oats

  2. 1-3/4 cups boiling water

  3. 1 cup firmly-packed brown sugar

  4. 3/4 cup sugar

  5. 1/2 cup butter

  6. 1 cup semisweet or dark chocolate chips

  7. 3 eggs

  8. 1-3/4 cups all-purpose flour, sifted

  9. 1 tsp. baking soda

  10. 1/2 tsp. salt

  11. Topping:

  12. 5 Tbsp. butter, melted

  13. 1 cup sweetened flaked coconut

  14. 1/2 cup chopped walnuts

  15. 1/2 cup brown sugar

  16. 1/4 cup cream

  17. 1 cup semisweet chocolate chips

  1. Preheat oven to 350 degrees F. Spray a 9 x 13 pan with cooking spray.

  2. Place oatmeal in a large mixing bowl. Pour boiling water over top. Let stand 5 minutes.

  3. Add sugars, butter and chocolate chips. Stir occasionally until butter and chocolate chips melt.

  4. Beat in eggs, one at a time.

  5. Add flour, baking soda and salt, mixing until combined. Pour into prepared pan. Bake on center rack 25-35 minutes.

  6. Meanwhile, prepare topping: Mix melted butter, coconut, walnuts, sugar and cream together until sugar is melted. Stir in chocolate chips. Sprinkle topping over cake.

  7. Turn oven to broil. Place cake on top rack, close oven and turn the oven light on. Let the cake broil 1-2 minutes, watching carefully to make sure the coconut doesn't burn. Turn the cake, and let it broil another 1-3 minutes -- watching carefully with the oven light on! -- until coconut is golden brown but not burned. Makes 12 servings.
