  1. BBQ Pork:

  2. 1 (5‑6 pound) pork butt, fat trimmed

  3. 2 tablespoons kosher salt

  4. 1 teaspoon ground black pepper

  5. 3 bottles Long Trail Blackberry Wheat Beer

  6. 3 bottles Long Trail Pollenator Beer

  7. 12 hearty sandwich rolls, sliced lengthwise

  8. BBQ Sauce:

  9. 1 white onion, finely chopped

  10. 2 tablespoons chopped garlic

  11. 1 tablespoon olive oil

  12. 1/2 teaspoon Kosher salt

  13. 1/4 teaspoon ground black pepper

  14. 1 cup dark brown sugar

  15. 2 cups ketchup

  16. 1/3 cup white vinegar

  17. 2 tablespoons yellow mustard

  18. 3 tablespoons blackberry preserves

  19. 1/2 cup fresh blackberries

  20. Slaw:

  21. 1/2 cup mayonnaise

  22. 2 tablespoons boiled cider

  23. 1 tablespoon Champagne vinegar

  24. 1/4 cup Long Trail Pollenator Beer

  25. 1/2 head red cabbage, shredded

  26. 1/2 head green cabbage, shredded

  27. 1 jalapeno, finely chopped

  28. 3 large carrots, shredded

  29. Salt and freshly ground black pepper

  1. Preheat the oven to 225°F. Place the pork butt in a large roasting pan, season with salt and pepper, and pour beer on top of butt. Tent with aluminum foil and place in oven for six hours or until pork pulls apart and shreds easily. Remove from oven and shred with two forks. Allow meat to mix with pan drippings and set aside until ready to mix with barbeque sauce.

  2. BBQ Sauce:

  3. Place all ingredients in a saucepan, bring to a boil and reduce the heat to low to simmer for 25 minutes . Remove from heat and mix the sauce with the pulled pork.

  4. Slaw:

  5. Place all ingredients in a saucepan, bring to a boil and reduce the heat to low to simmer for 25 minutes . Remove from heat and mix the sauce with the pulled pork.
